Tamura Shokuhin Corporation was founded in 1925 in Numazu City, Shizuoka Prefecture, Japan. The company produces wasabi zuke (wasabi pickles), tsukudani (simmered food in soy sauce), and other related products. Our wasabi pickles are made using plenty of wasabi root from the Izu area, Shizuoka prefecture, and sake lees from ginjo sake or higher grades. What is Hata Wasabi (field-grown wasabi)?
When wasabi seedlings are planted in streams, they become sawa wasabi (water-grown wasabi), and when they are planted in fields, they become Hata wasabi (field-grown wasabi). The original seeds and seedlings are the same.
Sawa wasabi is cultivated in clear streams for about a year and a half, allowing the roots to grow large and become commercially available. Field wasabi, on the other hand, is cultivated for about six months, allowing the stems to grow and become commercially available. Like sawa wasabi stems, it is used as an ingredient in wasabizuke pickles and wasabi paste.
Hata wasabi grows in pure water and rich soil, and is characterized by its fragrant aroma and refreshing spiciness. It is a blessing from nature that stimulates the appetite and dramatically enhances the flavor of dishes, making it a popular staple on many Japanese dining tables.

PROCESS
First, field wasabi is carefully harvested and cut into bite-sized pieces while still fresh. It is then mixed with sake lees to bring out its aroma and spiciness. Finally, it is hygienically packed to maintain quality, and the resulting product is richly flavored pickled wasabi. There is no waste food from the time the ingredients are received until the product is shipped (excluding defective ingredients and products that do not meet shipping standards).
